HB Marinated Veggies
- ½ cup thickly sliced zucchini
- ½ cup sliced yellow squash
- ½ cup sliced red onion
- 16 large fresh button mushrooms (optional)
- 16 cherry tomatoes
- 4 tablespoons of extra virgin olive oil
- 1 teaspoon soy sauce
- ½ tablespoon lemon juice
- ½ clove crushed garlic
Place zucchini, red pepper, yellow pepper, squash, red onion, mushrooms and tomatoes in a large bowl.
In smaller bowl, mix together olive oil, say sauce lemon juice and garlic. Pour over vegetables and toss. Cover bowl and marinate in refrigerator for 30 minutes.
Preheat grill to medium heat.
Remove vegetables from marinade and place on inside grill or on BBQ friendly grill plate. Grill or BBQ for 12 to 15 minutes or until tender. Enjoy!
